White Pepper Powder
The only part of the pepper berry used to make white pepper is the inner seed after the pericarp has been removed. The fruit is collected when it is fully mature and used to manufacture white pepper. Rub off the pepper’s outer, shrunken skin to reveal the dry, greyish-white pepper inside. After fermentation and peeling, this is crushed to create a powder.
